Bacon, Onion & Cheese Roll

Very delicious and simple to make, and you can add almost anything to it. I again didn't add quantities, because maybe you like a little less onion or more cheese, and with this roll, you can swing it any way you like. Add green peppers, mushrooms and feta. Add salami. Replace the bacon with salami... the combinations are endless!
The ingredients is what I used to make this roll.

Ingredients:

1 roll puff pastry, defrosted
onion
cheese, grated  (I used processed cheese.)
bacon 
1 egg

Method

Roll out the puff pastry.

Cover with the bacon. 
Add the onion. Cover evenly.
Cover with cheese.
Roll up.


Whisk the egg with a little bit of water to make the eggwash. And brush your roll. Make a couple of slits on the top of the roll for the steam to escape.
Bake in the oven @ 160degrees C for half an hour, or until it browns nicely.

And serve!

Capiola Pizza

This is a simple pizza, but super delicious and super easy and quick. The name doesn't mean anything really, but it is derived from "cipolla" which is onion, in Italian. Because onion is your main feature in this pizza.

Preparation time: 20min
Cooking time: 20 - 30 min
Difficulty Level: Easy
Serves: up to 8, depending on your base

Ingredients

1 punnet mushrooms, sliced
1 large onion, chopped
200g bacon, cubed
2 rinds black pepper feta or plain feta, cubed
200g cheddar cheese, grated
200g mozzarella cheese, grated
1 roll puff pastry
3tbs mayonnaise
2tbs cottage cheese
1tbs german mustard
salt & pepper

Method

Mix the mayonnaise, cottage cheese and mustard very well. Add some salt and pepper to taste. and mix well.




Preheat the oven to 180degrees C.Roll out the puff pastry as thin as you like it. I got two large oven pans covered with 1 roll. The base does get thin, though, but taste wise it's still fabulous. If you want, you can use 2 puff pastry rolls, and just not roll it out as much, or at all.
Spread the mayo mixture evenly over to cover the whole surface of the pastry. 

Add the onion, 

then the cheddar cheese, 

then the mushrooms, 

then the feta and lastly, the bacon. 

Evenly cover with the mozzarella and sprinkle some cayenne pepper or paprika over if you like.

Pop in the oven for about 20 - 30 minutes, but keep an eye on it. When the mozzarella starts to brown, it is ready. 

Remove from oven, slice and serve...

And enjoy... this is pure indulgence!!

Buttery stew Pie

I am so sorry, yet ANOTHER stew recipe... Although, this one is a little different. And even more delicious than the others!! But I do love my pies...

Preparation time: 10min
Cooking time: 5 hours
Difficulty Level: Easy
Serves: 6

Ingredients:

4tbs butter
2tbs soya sauce
1tbs balsamic vinegar
500g stew meat
300ml boiling water
1 cube beef stock
2t Bisto
1 onion, chopped
4 medium potatoes, cubed
1 roll puff pastry

Method:

I used the slow cooker as it is very easy to put the meat in and leave it. It also cooks very soft, as stew meat can be a bit chewy. You can do this on the stove, if you don't have a slow cooker. Your cooking time will be much less, though, and you will have to continually check that it does not burn. 
Place the meat in the pot. 

 Add the butter, soya sauce, vinegar. Dissolve the beef stock in half the boiling water and add to the pot. 

Cook for 2 hours. 

Dissolve the Bisto in the other half of the boiling water and add to the pot. Add the onion and the potato. Cook for another 2 hours. The potato should be ready. Roll out the puff pastry and line a baking dish. Scoop the meat into the dish and cover with pastry. Brush with eggwash or milk. Bake in the oven at 160degrees C until nicely browned.

Serve with a salad or side veggies and enjoy!!

The FLOP! Baked Boerewors Roll

Yes, this came out one gigantic flop. Luckily my family were too hungry to complain! The idea is interesting, though - a twist on the plain Boerewors Roll - but like I said, the execution of it wasn't quite so...uhm... good. The veggies however, were totally divine. 

Ingredients

800g Boerewors
1 roll puff pastry
1 410g tomato & onion
1x packet white onion soup
500ml water
150g cheese, grated
1/2 onion, chopped
1 punnet of mushrooms, sliced

Method

Roll out the puff pastry and spread a thin layer of butter over it. Sprinkle the cheese over, then the onion. 

Then spread the mushrooms over. Place the wors on the dough, so you can roll it over. 

Place in a baking dish, I cut mine to fit better. 

Throw some tomato & onion around it. 

Dissolve the soup in the water and add to the tomato & onion. 

Bake in an oven at 160degrees C until cooked. 

 Serve with some Butter Veggies and enjoy!



What I will change next time: After the butter, spread Tomato Paste, then a little sugar, some origanum and then the cheese & onion. Then mushrooms. Mix the soup in 250ml water and pour around the Rolls and bake. This should result in a thicker sauce complimenting the Baked Roll.

Chicken Pie with Apple

I have another chicken pie recipe, but that one is classified... hiehie... However, I wanted to try another way of making chicken pie, an easier way, less ingredients, etc. This is what resulted - and although the taste is pretty amazing, I am not entirely happy with the recipe and will have to revisit this one, with a couple of amendments. For now, though, this is it. The apple came as inspiration, and it does add quite an interesting sweetness. 

Preparation time: 20min
Cooking/baking time: 6 hours
Difficulty level: Easy
Serves: 8

Ingredients

5 chicken pieces (white meat)
200ml water
1tbs soya sauce
1cup sago
250ml cream
1 star anise
2 bay leaves
pinch freshly ground nutmeg
2tbs mayonnaise
salt & pepper
1 onion, chopped
1 tin (200g) mushrooms/ half punnet sliced mushrooms
1 apple, grated
2tbs butter
1 roll puff pastry

Method

Place the chicken in a slow cooker. Add the water, soya sauce, star anise, bay leaves and nutmeg. Cook for about 5 hours, until very tender. 

The more tender it is, the easier it is to remove the bones. Once cooked, strain the liquid into a separate bowl, 


and remove the bones (and skin, if you're so inclined). Mince the meat finely by using two forks and pulling the meat apart. 

Add the sago to the liquid and let it sit until most of the sago is see-through. 

Melt the butter in a pan, fry the onion, apple and mushrooms until starting to brown.

Add to the chicken meat. Add salt (sparingly) and pepper to taste. 


Whisk the cream and mayonnaise together and add to the sago mixture. 

Add the meat to the sago mixture and mix well. Lightly roll out the puff pastry. Scoop the mixture into an oven dish, 

and cover with the puff pastry. Brush with eggwash or milk. 

Bake in the oven at 160degrees C for 30min to an hour, until the pastry is nicely browned. 

Dish up, with a fresh garden salad, or the famous Strawberry salad.

Baked Mince Roll

Since I swopped Wednesday and Monday around, so that I could make that absolutely divine Potato & Leek Soup, yesterday had to be Mince day. I leafed through a recipe book and found my inspiration... This has quite a rich taste to it, and it is so easy to make and fairly quick, too. 

Preparation Time: 20min
Cooking time: 50min
Difficulty Level: Easy
Serves: 5

Ingredients

500g mince
2tbs soya sauce
1tbs balsamic vinegar
1/4 cup red wine
1t spice for mince
1t origanum
1tbs sugar
Salt and Pepper to taste
1 410g in tomato and onion
1 1/4 cup grated cheddar cheese
1/2tub cream cheese
3tbs mayonnaise
butter
olive oil
1 roll puff pastry

Method
Fry the mince in a little olive oil. If needed, add a little water (3tbs). Make sure the mince grains are loosened well. Add the soya sauce, balsamic vinegar and red wine.

 Stir through. Add the spice for Mince, origanum and sugar. Add salt & pepper to taste, although I will be very careful to add more salt. I only added pepper. Mix well. Add the tin tomato & onion and let the whole mixture cook for a little while, put on the lid, remove from the heat and let it cool down.

Whisk the cream cheese and mayonnaise together. Roll out the puff pastry very lightly. Lightly coat the pastry with a layer of butter. Then add the cream cheese mixture.

Sprinkle the cheese over evenly.

Once the mince has cooled down, spread over the cheese, evenly over the whole pastry sheet. Roll up from one side - some mince may escape, enjoy the titbits!! Carefully pick up and place in a casserole dish. Wash with eggwash or milk. 

Bake in an oven at 160degrees C for about  30 minutes until golden brown. 


Slice and serve with a fresh garden salad. And enjoy!

Sweetcorn Pie

This is another twist on the standard ingredients: mushrooms, onion, bacon and sweetcorn. It came out very nice, and you can actually make it without the dough for a low carb meal! 

Preparation time: 20min
Baking time: +-30min
Serves: 6
Difficulty Level: Very easy

Ingredients

1 410g tin sweetcorn
1/2 punnet mushrooms, sliced
1/2 green pepper, chopped
1 onion, chopped
250g bacon, diced
1t english mustard
1tbs parsley
4 eggs
250ml cream
olive oil / butter
1 roll puff pastry
2cups grated cheddar cheese

Method

Fry the mushrooms, green pepper, onion and bacon in the olive oil or butter, until nicely browned. 
  
Whisk the eggs, mustard, parsley and cream together. Mix with sweetcorn and cheese. 

Spray an oven proof dish with non-stick spray. Scoop the mushroom mixture into the dish and even out. 
Pour the sweetcorn mix over and even out. 

Unroll the pastry and place over the dish. Cut the dough to perfectly fit into the dish. 

Bake in oven at 160degrees C for about 30 minutes until the pastry is nicely browned.

Dish up and enjoy with a fresh garden salad.
