Spicy Tomato Sauce

This is a nice little handy sauce that is quick and easy to make, if you need a quick and tasty sauce. change the spicing to your taste - make it hotter or more peppery as your taste buds may require!

Ingredients
2x tins tomato & onion
1t origanum
1t sugar
1/4t coarse ground pepper
2x twists of ground chilli
1t worcestershire sauce
Optional: 1/2t garlic

Method
1. Put everything in a saucepan, mix well and heat till it just boils.
2. Serve with spaghetti, Spaghetti & Cheesy Meatballs, or with any other dish that require a quick sauce.

Mince Pie with Yoghurt Crust

What is time?
My word, whatever it is, it sure does fly!! 
We are only allocated a certain amount of time on this earth, and that time is divided into 24 hours per day. What we do with this time, is entirely up to us. No, this is not suddenly a philosophy blog, I'm just sharing... Sometimes, (...times... get it?) we have to TAKE time. You cannot wait until you have enough time - you will never have enough time. It can't be stored, you can't save it for later... When you have it, you have to use it!! 
I want cook and bake (among many, many other things). I want to blog about my cooking, and I want to publish a recipe book. So, I am TAKING time, and will accomplish just that.
What do YOU want to do?

Today's recipe is a Mince Pie with a Yoghurt crust. It is something different, but still very delicious, easy to make, and can be made with the budgeted version, or the more delectable version... I have run out of soya sauce, and have started substituting it with worcestershire sauce, and I am impressed. It browns just as nicely and tastes just as great.





Ingredients 
500g mince
2tbs worcestershire sauce/soya sauce
1tbs spice for mince
1 onion, cubed
1 can tomato & onion 
1 packet Mushroom soup
600ml water
1/3cup flour
salt & pepper 

Topping
4 eggs
500ml plain yoghurt / amasi
1/3cup flour
salt & pepper

Method
1. Heat a pan to hot, add the mince and stir it, loosening it well, until browning.
2. Add the worcestershire sauce/soya sauce, & spice for mince.
3. Brown the mince well, make sure it is well loosened. 
4. Add the onion, mix.
5. Add the mushroom soup to the 600ml warm water and dissolve. Add to the mince.
6. Cook on slow heat for about 15 min, until it begins to thicken.
7. Add the flour and whisk it in. Stir continuously top prevent it from sticking or burning.
8. Whisk together the eggs, yoghurt/amasi, flour, salt & pepper to taste.
9. Scoop the mince into a baking dish, or several individual dishes.
10. Pour the topping over the back of a spoon onto the mince (this prevents it from making a hole in the mince).
11. Bake in an oven @ 160degrees C, until the topping is set.
12. Switch on the grill, up the temp to 200, and grill until lightly browned.

Serve warm!!



Optional Extras
250g/ punnet mushrooms, sliced
green pepper, cubed
1 rind feta
1/2cup cheddar cheese, grated

Add the mushrooms, green pepper and feta with the onion to the mince.
Add the cheddar cheese to the egg mixture and blend in a blender to make it fine.

The FLOP! Baked Boerewors Roll

Yes, this came out one gigantic flop. Luckily my family were too hungry to complain! The idea is interesting, though - a twist on the plain Boerewors Roll - but like I said, the execution of it wasn't quite so...uhm... good. The veggies however, were totally divine. 

Ingredients

800g Boerewors
1 roll puff pastry
1 410g tomato & onion
1x packet white onion soup
500ml water
150g cheese, grated
1/2 onion, chopped
1 punnet of mushrooms, sliced

Method

Roll out the puff pastry and spread a thin layer of butter over it. Sprinkle the cheese over, then the onion. 

Then spread the mushrooms over. Place the wors on the dough, so you can roll it over. 

Place in a baking dish, I cut mine to fit better. 

Throw some tomato & onion around it. 

Dissolve the soup in the water and add to the tomato & onion. 

Bake in an oven at 160degrees C until cooked. 

 Serve with some Butter Veggies and enjoy!



What I will change next time: After the butter, spread Tomato Paste, then a little sugar, some origanum and then the cheese & onion. Then mushrooms. Mix the soup in 250ml water and pour around the Rolls and bake. This should result in a thicker sauce complimenting the Baked Roll.

Baked Mince Roll

Since I swopped Wednesday and Monday around, so that I could make that absolutely divine Potato & Leek Soup, yesterday had to be Mince day. I leafed through a recipe book and found my inspiration... This has quite a rich taste to it, and it is so easy to make and fairly quick, too. 

Preparation Time: 20min
Cooking time: 50min
Difficulty Level: Easy
Serves: 5

Ingredients

500g mince
2tbs soya sauce
1tbs balsamic vinegar
1/4 cup red wine
1t spice for mince
1t origanum
1tbs sugar
Salt and Pepper to taste
1 410g in tomato and onion
1 1/4 cup grated cheddar cheese
1/2tub cream cheese
3tbs mayonnaise
butter
olive oil
1 roll puff pastry

Method
Fry the mince in a little olive oil. If needed, add a little water (3tbs). Make sure the mince grains are loosened well. Add the soya sauce, balsamic vinegar and red wine.

 Stir through. Add the spice for Mince, origanum and sugar. Add salt & pepper to taste, although I will be very careful to add more salt. I only added pepper. Mix well. Add the tin tomato & onion and let the whole mixture cook for a little while, put on the lid, remove from the heat and let it cool down.

Whisk the cream cheese and mayonnaise together. Roll out the puff pastry very lightly. Lightly coat the pastry with a layer of butter. Then add the cream cheese mixture.

Sprinkle the cheese over evenly.

Once the mince has cooled down, spread over the cheese, evenly over the whole pastry sheet. Roll up from one side - some mince may escape, enjoy the titbits!! Carefully pick up and place in a casserole dish. Wash with eggwash or milk. 

Bake in an oven at 160degrees C for about  30 minutes until golden brown. 


Slice and serve with a fresh garden salad. And enjoy!

Wors, mash & Tomato sauce with banana salad

Yes, I know. Today's recipe is nothing short of imagineless (if there is such a word....) But, I did say that I was going to make 365 meals - one for each day of the year. I never said it was going to be gourmet cooking for 365 days!! (hiehie...)

In light of this being such a simple dish, I am not going to be very formal regarding the ingredients and method. 

Wors - Fry it in a pan, to your own liking. 

Mash - Cook 1 potato for every person eating until soft. Add salt & pepper to taste. Mash in butter (about 1t per potato) (but I love buttery mash, so make it a bit more), add cream to make it as soft as you like it. 

Sauce - Fry 1/2 punnet mushrooms in butter. Add 1 tin of tomato & onion, and one packet of tomato paste. Cook, but it burns quickly, add water to thin it. Add salt & pepper to taste, 3tbs sugar and 1tbs origanum. Mix well. Add water or cream to make it thinner if you like.

Banana Salad - Slice bananas into wheels. Add mayonnaise to your liking. And mix in a pinch of salt. 

And serve!! This may not be gourmet cooking, but it certainly is a filling and tasty dinner.
My family was very hungry, I had to snap a picture very quickly before it was all gone!!

Risch's Spaghetti Bolognaise

Hi everybody!!

We all know Spaghetti Bolognaise, it is after all a traditional favourite. Try my version for an alternative that will tickle your tastebuds... 

Ingredients

250g Spaghetti
1 tin 200g mushrooms
1 tin Tomato & Onion 
1 packet Tomato Paste
Salt & Pepper to taste
Grated Cheddar Cheese
2tbl soya sauce
1tbl crushed garlic
2t spice for Mince
2tbl sugar
400g Mince
Oil for frying

Method

Boil water in a pot. Once it boils, add the spaghetti and stir. Add salt. Cook until it is soft, but not soggy. Fry the mince in some oil. Add salt & pepper to taste, add the origanum, soya sauce, garlic and Spice for Mince and stir thoroughly. Fry until mince is cooked through. Add mushrooms, tomato & onion and tomato paste and sugar and mix well. You can either mix the spaghetti and mince before dishing up, or dish it up seperately. Sprinkle grated cheese over and serve! Makes 6 portions.

For added flavour, sprinkle grated Parmesan cheese to taste as well.
