Macaroni & Mince

I haven't posted anything in such a long time!! Not that I didn't cook or bake... I was busy being pregnant and having a beautiful baby girl!! We are now 7 mouths to feed (I know, my baby doesn't eat yet, but it won't hurt to start planning...



And Mondays are STILL mince-days. So today, is Macaroni & Mince. This humble meal is quite delicious and filling, and enough for 8 people!! You can have it the plain, budgeted version, or you can add some Optional Extras if the budget allows... My mince was frozen, I just defrosted it in the microwave. And the macaroni is the cheapest bulk pack I could find.

My family enjoyed this meal, and my son made it extra special by lighting a few candles to create a warm, family bound atmosphere.. Nothing beats family time!!



Ingredients
3cups Macaroni
1 1/2L water
1tbs salt
1tbs oil
1 onion, peeled, chopped
500g Mince
2tbs soya sauce
1/4t all spice (substitute: nutmeg)
2t spice for mince
Salt & White pepper to taste

Method
Bring the water and tbs salt to a boil. Add the macaroni and cook to al dente. Pour off extra water. Set aside.
Heat the oil in a frying pan.
Add the onion. Fry until just turning brown.
Add the mince. Loosen the mince well.
Add the soya sauce, all spice, spice for mince, salt & pepper.
Fry until the mince is a little darkened and well loosened.
Mix the macaroni and the mince.
Serve warm.



Optional Extras
250g punnet mushrooms, sliced
1tbs butter
parmesan / feta cheese
And / or
250g bacon bits

Melt the butter. Fry the bacon until well done. Add the mushrooms, fry it lightly. Remove from heat before it begins to water and shrink. Add to the macaroni and mince. Top with parmesan or crumbled feta to taste. Serve warm!

Enjoy with a delectable glass of red wine.
