Savory Mince Bake

Basically a one-bowl dish, this is a winner. Mince is a very versatile kind of meat, but it can also turn boring quickly - just how many varients on Mince & Macaroni is there? But this dish is something quite different, packed with flavour to tickle your tastebuds and very filling.

1 onion, chopped
1 cup rice, raw
1x packet mushroom soup
450ml warm water
1/2 cup cream
1tbs dried parsley

1t origanum
1 cup breadcrumbs
2tbs butter, melted

Method
1. Heat the oil in a saucepan and fry the mince till done. Be sure to break the mince well.
2. Add the onion and fry till lightly browned.
3. Mix the soup powder with the warm water and cream, dissolve well.
4. Add the rice, soup mixture, parsley, salt and origanum to the the mince.
5. Scoop into an oven proof dish with a lid and bake at 180 degrees C for 50minutes with the lid on.
6. Mix the breadcrumbs with the butter and sprinkle over the dish.
7.Bake uncovered for another 20min or so, until browned

Serve warm, with a salad for a side and red wine. (The kids can have milk, though!)

Potato Bake with Bacon

Potatoes is one of the most versatile foods out there. And also one of the healthiest – despite what those medical people say. You take a potato out of the ground, wash it and cook it – no processing whatsoever. Please tell me how it can be unhealthy? Not to mention how absolutely delicious potatoes are with butter and cheese and cream and mushrooms…

Preparation time: 15min
Cooking time: +-2hours
Difficulty Level: Very easy
Serves: 6

Ingredients:

8 medium potatoes
500ml milk
1 onion, finely chopped
50g butter
350g bacon bits
100g cheese
Salt & Pepper
Breadcrumbs in butter

Method:

Cook the whole potatoes till ¾ ready.

Add the onion to the milk and cook for about 20min on medium heat.

Drain the milk off, and keep both the milk and onion.

Melt the butter and fry the onion and bacon until soft and lightly starting to brown.

Add the onion milk and mix well.

Slice the potatoes and layer in a baking dish. Dot a little butter and sprinkle salt & pepper over the potato.

Add some cheese. Add another layer of potato, and continue to layer until all the potato is done.

Pour over the bacon mixture.
Melt some butter and add the breadcrumbs, enough to cover the top the dish. I had a bit of a mishap, so mine doesn't exactly cover the top!!

Bake in the oven at 160°C until nicely browned.

Serve at a braai, or as part of dinner or enjoy as is!!

Tuna & Cheese Loaf

What to give the kids to eat? This is probably one of the hardest questions to answer, especially if you don't feel like eating and will be just fine with coffee... but the kids has to eat... SOMETHING!!
I have tried several tuna pies before, and although mostly delicious, they were dry.
This recipe makes a single batch of batter, and I had to make 2 batches to fill my dish to the level as you can see in the photo. It comes out like meat loaf - hence the name. It is filling and the kids loved it!!

Preparation time: 10min
Cooking time: 45 min to 1 hour
Serves: 6
Difficulty Level: Very easy

Ingredients

3 eggs
1 tin tuna in water
100g cheese, grated
salt & pepper to taste
1t German mustard
1/2 onion, quartered
1/2cup breadcrumbs

1 roll puff pastry

Method

Put all the ingredients in a mixer and mix until very well mixed and almost smooth in texture. If you have a big and strong enough machine, you can add all at once. If you don't - like me - then you add the chunkier ones first: cheese, egg and onion. Mix.

Then add the tuna, salt, pepper and mustard. Lastly, add the crumbs to mix.

Do not roll out the puff pastry. Just cut it to size for your baking dish, to form a bottom and top layer. Place the bottom part of the pastry in a sprayed baking dish. Scoop the mixture in and level out.

Add the top layer of the pastry. Cut in little slithers, to let some steam out.

Bake in a pre-heated oven at 180degrees C until the pastry is puffed up and a tester comes out clean. The sides will start to lightly brown, too.

Dish up with a salad, maybe some mayonnaise, or as is....

...and enjoy!!!

Cheesy Mince Bake

Just something different with mince... But much more delicious than you can imagine. Can be enjoyed with rice or potato, we had ours with a slice of bread!!

Preparation time: 15min
Cooking time: 20 - 30 min
Difficulty Level: Easy
Serves: 6

Ingredients

500g Mince
200g grated cheddar cheese
1 onion, chopped
2 eggs
2t spice for mince
1/2 cup flour
1/4 cup breadcrumbs
salt & pepper to taste
2tbs soya sauce
1tbs balsamic vinegar
cayenne pepper

Method

Mix the mince, soya sauce and balsamic vinegar. Mix the eggs, onion, spice for mince, flour, breadcrumbs, salt and pepper thoroughly.

(I used those thinga-ma-jigs from Verimark...) Add the egg mixture to the mince and combine well.

Spray an oven dish with spray&cook. Scoop half the mince into the dish and level out. Add 2 thirds of the cheese and spread evenly over the mince.

Add the other half of the mince and level. Add remaining cheese evenly over the mince. Sprinkle some cayenne pepper over.

Bake in the oven at 160degrees C for about 20 - 30 minutes until the cheese is a nice golden brown.

Serve with a fresh salad and enjoy!!

Crumbed Mushrooms

Now I don't know about you, but I have been trying to make the perfect crumbed mushrooms since forever, and I have never succeeded. However, a lightning bolt of inspiration struck yesterday and I did it. I made the perfect crumbed mushrooms!! And it's so ridiculously easy...

Ingredients

1 punnet of whole mushrooms
2 eggs
breadcrumbs
cooking oil

Method

Wash the mushrooms.

Beat the eggs well and pour over the mushrooms, Fold the mushrooms gently over, to cover all of them with the egg.

Cover with crumbs.

Heat the oil. I found that using an oil rack-thingy, really helped getting the mushrooms evenly fried.

Once the oil is ready, place the mushrooms in the rack-thingy in the pot and fry until golden brown.

Remove from the oil and tip the rack-thingy onto some kitchen towels to drain off excess oil.

Serve warm with Cheese & Bacon sauce, or an Onion-Pepper sauce!

No-Bake Butter Chocolate Brownies

My son hounded me to make his cookies... It's nice cookies, but he has made them a couple of times now, and I was in the mood for something different.
So I thought of this no-bake chocolate brownie. My mom actually has the perfect recipe, and I will still get that recipe and post it here as well. But I wanted to see if I couldn't find something else...
Alas, all the recipes on the web, is complicated. With nuts, and dates, and oats, and some other weird ingredients I either don't have in my cupboard, or I feel is to expensive to use. Oh, and I wanted something WITHOUT oats.
I want an easy recipe, quick and cheap. One you can even make at the end of the month...

So, I decided to make my own...

Ingredients

250g margarine
1cup sugar
1/2 cup cocoa
1/2 cup desiccated coconut
1tbs vanilla
1 packet tennis biscuits
pinch of salt
Breadcrumbs
choc chips (optional)

Method

Melt the margarine over low heat. Add the sugar, salt and the cocoa. Constantly stirring. The sugar must melt. It makes a syrup consistency. Remove from heat, continue stirring. Add the crushed cookies, mix well. Add the vanilla, mix well. Spray a dish with non-stick spray, or brush with margarine and sieve icing sugar over. Sprinkle the choc chips on the bottom, if you want to use it. Scoop the mixture into the dish. Level out. Evenly sprinkle the breadcrumbs over the top. Put into the fridge to cool down and set. Once cooled, cut and enjoy!!
Perfect with a cup of coffee when you feel indulgent...

It is not so sweet as some of the others, and the breadcrumbs adds a little dimension to the already wonderful chocolatey flavours. It is so easy and quick to make, and it sets quickly too. Chocolate is always a sure winner to serve, and if unexpected guests arrive, this is a perfect solution!!

Have a sweet day!

Tuna tart with noodles

A very happy good morning to you all on this fabulous monday!!!
I hope you had a wonderful weekend and is refreshed and energised for this week - I think this is going to be one hectic week!!

Over the weekend I made this Tuna Tart. I do love my "moerby" dishes. Every time you make it, it tastes different!! This Tuna Tart is quite simple, easy and cheap - but tasty and filling. A real meal for the end of the month, when groceries and cash are running equally low...

Ingredients

150g margarine
1 onion, chopped
1 tin 410g sweetcorn
3 eggs
2tbs mayonnaise
4tbs plain yoghurt (can be substituted with buttermilk, cream or milk)
2t origanum
1t hot english mustard
1 tin fine tuna in salt water
1/2 t Paprika
1 packet 2min noodles
breadcrumbs
salt & pepper to taste

Method

Melt the butter. Cool it a little, and crack the eggs in. Whisk until mixed. Add the sweetcorn, onion, mayonnaise, yogurt, origanum, mustard, tuna, paprika and salt& pepper.

Mix it all together. It shouldn't me too stiff, but not too runny either. Crush the noodles, mix it in. Scoop into a non-stick sprayed dish, level out. Sprinkle breadcrumbs over. Bake in the oven at 160degrees C for about half an hour.
Before baking

After baking

And enjoy!!

This dish may not look like much, but don't be fooled. And, as always, the kids love it!!
Have a great day!!
